School Introduction
This school is an academy run by Ginza Onodera, which has been developed in 7 cities around the world including Michelin stores. Indeed, one of its main attractions is its instructors, who are Michelin star chefs of famous shops. Since its establishment the academy has gained a notable track record in the industry with more than a thousand graduates, who have all acquired the skills required to become a top-class sushi chef,
The program follows the motto that it is necessary to have both understanding with the head as well as learning with the body in order to acquire the technical skills of sushi. The course is approximately 3 months (a total of 400 hours) with additional 112.5 hours of hands-on practise. By the end of the course, students will have learned everything from the history of Edo-style sushi, handling and using knives with perfect technique, applying vinegar, garnishing, simmering, and rice preparation, as well as knowledge about law, hygiene, customer service, and the operation of sushi shops including kitchen etiquette.
In addition to the curricula being designed to maximize your employability, the Ginza Onodera Sushi Academy assists with post-graduation employment seeking with its vast network of employers, many of whom are well known in both Japan and overseas.
