Osu No Sushi School offers an immersive, master-level sushi education in the scenic Miyazaki prefecture. Focused on both traditional Japanese sushi techniques and modern fusion styles. The Artisan Course is a two-month residential program rooted in Japanese martial arts principles, specifically designed to train individuals to become professional sushi chefs. Through a blend of rigorous culinary training and cultural immersion, this course targets aspiring professional sushi chefs who are passionate about mastering the art of sushi.

Module 1: Basic Sushi Ingredients and Tools Learn how to select and handle essential sushi ingredients such as seafood, seaweed, rice, and vinegar. This module also covers the necessary tools and equipment, highlighting the importance of the sushi chef’s knife.
Module 2: Types of Sushi (Nigiri, Maki, Chirashi, and More) Explore various types of sushi and their unique characteristics. Focus on the preparation and presentation of styles like Nigiri, Maki, and Chirashi to understand their distinct features.
Module 3: Rice Selection and Cooking Master the art of sushi rice by learning how to choose, wash, cook, and season rice with vinegar to achieve perfect sushi rice.
Module 4: Sushi Techniques and Methods Acquire essential skills and techniques for sushi-making, including ingredient selection, handling, cutting, plating, shaping, and forming, with a focus on shaping sushi rice.
Module 5: Specialty Sushi and Creative Sushi Discover regional specialty sushi, its unique traits, and history. Learn how to create innovative sushi and develop new ideas.
Module 6: Professional Skills and Knowledge Enhance professional skills as a sushi artisan, covering hygiene, safety, restaurant service, hospitality, menu development, and other management aspects of running a sushi restaurant.
Module 7: Integration with Japanese Cuisine Learn how to integrate sushi with broader Japanese cuisine. This module focuses on creating harmony with other Japanese dishes and includes insights from external experts to diversify dining experiences.
